Banana collagen pancakes recipe: a nourishing, protein-rich breakfast

Ingredients (makes about 4 small pancakes)

1 ripe banana, mashed

1 egg

1 tbsp (15 ml) chia seeds

¼ cup (60 ml) 1% milk

½ cup (125 ml) whole wheat flour

1 tsp (5 ml) baking powder

1 scoop of Nurish collagen powder

1–2 tsp (5–10 ml) vegetable oil, for cooking
Toppings (optional)

a spoonful of fruit spread or a drizzle of maple syrup

fresh fruit of your choice (strawberries, blueberries, raspberries, etc.)
Instructions

In a bowl, mash the banana.

Add the egg, chia seeds and milk. Mix well.

Stir in the flour, baking powder and collagen powder until the batter is smooth.

Heat a non-stick skillet over medium-low heat and add a bit of oil.

Pour about ¼ cup (60 ml) of batter per pancake. Cook for about 2 minutes on each side, or until golden.

Repeat with the remaining batter.
