Banana collagen pancakes recipe: a nourishing, protein-rich breakfast

Looking for a quick and healthy breakfast idea to start your day right? These banana collagen pancakes are packed with nutrients and perfect for busy mornings or weekend brunch. Made with simple ingredients and enriched with Nurish collagen powder, they support skin, joints and energy levels—all in one delicious bite.

Ideal for back-to-school season or anytime you want a satisfying, wholesome meal.

Ingredients (makes about 4 small pancakes)

  • 1 ripe banana, mashed

  • 1 egg

  • 1 tbsp (15 ml) chia seeds

  • ¼ cup (60 ml) 1% milk

  • ½ cup (125 ml) whole wheat flour

  • 1 tsp (5 ml) baking powder

  • 1 scoop of Nurish collagen powder

  • 1–2 tsp (5–10 ml) vegetable oil, for cooking

Toppings (optional)

  • a spoonful of fruit spread or a drizzle of maple syrup

  • fresh fruit of your choice (strawberries, blueberries, raspberries, etc.)

Instructions

  1. In a bowl, mash the banana.

  2. Add the egg, chia seeds and milk. Mix well.

  3. Stir in the flour, baking powder and collagen powder until the batter is smooth.

  4. Heat a non-stick skillet over medium-low heat and add a bit of oil.

  5. Pour about ¼ cup (60 ml) of batter per pancake. Cook for about 2 minutes on each side, or until golden.

  6. Repeat with the remaining batter.

  7. Serve warm with your favourite fruit spread and fresh berries.
